Definitely, a good idea…that is, when two friends, one a Belgian wine waiter and the other a Japanese cook, come together because of a shared passion, and an ability to see things the same way. Of their first meeting, one worked previously at Sanglier des Ardennes and the other at Eveil des Sens, before Roland and Yo chose to follow their own path three years ago. Their cuisine is ‘traditional revisited’ with shrimp croquettes and thick-cut rib steak among the ingredients, with the former served raw, Japanese-style, and the latter grilled to perfection.
As far as the wines are concerned, Roland’s passion revolves around two axes – wines of the month and wines of friends, the latter being the more coveted vintages. A common denominator between both menus, they are changed every month!
