Ensconced only a few paces from the most beautiful Grand-Place in the world, Up North already stands out in the gourmet arena. Belgium, and Brussels in particular, we have been deprived of Scandinavian cooking, which has been in the news lately thanks to the emergence of great chefs such as René Redzepi at Noma in Copenhagen, for example.
Now that Up North has come further south! Up North is Egil Haaseth, an amiable chap who has settled here with a mission to show us the very best produce from Scandinavian land and seas... and magnificent produce it is too, tastes that are aided by novel cooking methods and a great liberty of movement, free of the codes that can shackle chefs in Belgium. Opening up the way for these new cooks is a big challenge for the Nordic suppliers who allowed Scandinavian chefs the opportunity to show the produce in the best light and to demonstrate their knowledge of a cuisine that has very particular flavours. Worth discovering!
